A Bowl of Comfort: Pumpkin Soup to Warm the Soul
There is something about an October evening that invites us to slow down. The air turns crisp, the kitchen feels warmer, and a simple pot of soup gives us something good to look forward to.
Even when the day has felt long, there is comfort in making a nourishing meal. A pumpkin roasting in the oven. An onion softening in a cast iron pot. A place at the table where you can take a breath and settle in.
At Stillwater Mercantile & Co., we believe these everyday comforts should be within everyone’s reach. You don’t need an elaborate table or expensive ingredients to make an evening feel special. Sometimes, a warm bowl and a little time together are enough.
This hearty pumpkin, white bean, and spinach soup has the satisfying feel of a rustic autumn stew. Roasted pumpkin creates a velvety base without heavy cream, while white beans add substance. A sturdy cast iron soup pot holds steady heat as everything gently simmers, bringing a little old-fashioned comfort to the kitchen.
Roasted Pumpkin, White Bean & Spinach Soup
Serves 4 | About 75–90 minutes, including roasting
Ingredients
- 1 small pie pumpkin, also called a sugar pumpkin, about 2–3 pounds; you’ll use 1¾ cups of cooked purée
- 2 tablespoons olive oil, divided
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 teaspoon dried thyme
- 2 cans (15 ounces each) no-salt-added cannellini beans, drained and rinsed
- 3 cups low-sodium vegetable broth, plus a little more if needed
- 3 packed cups fresh spinach
- 1 tablespoon lemon juice
- Black pepper and salt, to taste
- Whole-grain toast, for serving, optional
Make it simply
- Roast the pumpkin. Heat the oven to 400°F. Carefully cut the pumpkin in half and scoop out the seeds and stringy center. Rub the cut surfaces with 1 tablespoon olive oil. Add a pinch of sea salt and pepper. Place cut-side down on a parchment-lined, rimmed baking sheet. Roast for 40–60 minutes, until the flesh is very tender when pierced with a fork.
- Blend until smooth. Let the pumpkin cool enough to handle, then scoop the flesh into a deep, narrow container suitable for a hand-held immersion blender. Blend until smooth, adding a small splash of the measured broth if needed. Keep the blender head submerged to prevent splashing. Measure 1¾ cups pumpkin purée for the soup; refrigerate or freeze any extra.
- Start with your cast iron pot. Warm the remaining tablespoon of olive oil in a cast iron soup pot or Dutch oven over medium-low heat. An enameled cast iron pot works especially well. Add the onion and cook for 5–7 minutes, stirring occasionally, until softened.
- Add the autumn flavor. Stir in the garlic and thyme and cook for 30 seconds, until fragrant.
- Let it simmer. Add the pumpkin purée, beans, and remaining measured broth. Stir well and bring to a gentle simmer. Reduce the heat and cook for 15 minutes, stirring occasionally. Mash a few beans against the side of the pot for a thicker, stew-like texture. Add a little extra broth if you prefer a thinner soup.
- Finish with something fresh. Stir in the spinach and cook just until wilted. Turn off the heat, stir in the lemon juice, and season with salt and pepper to taste. Ladle into bowls and serve with crusty sourdough bread, if desired.
A little shortcut: On a busy evening, substitute one 15-ounce can of plain pumpkin purée for the roasted pumpkin. Begin with Step 3, using 1 tablespoon olive oil, for a supper ready in about 30 minutes.
